The Asian diet includes lots of fish, vegetables and rice and nowhere near the amount of artificial colours that we use so much in the west. Try this simple salmon stir fry, the omega-3 in the salmon to help keep arteries healthy. This recipe serves 2 but the quantities can be adapted depending on how many you are feeding.

Ingredients:

  • 2 fresh salmon fillets, cubed
  • 2 cloves of garlic, crushed
  • 1 pack mange tout
  • 1 pack baby corn, chopped
  • 1 pack pak choi, chopped
  • 1 can beansprouts
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 inch grated ginger
  • Handful of cashews
  • Soy sauce
  • Juice of 1 lime

Add the oil, ginger and garlic to a hot pan or wok and then gently fry the salmon for 4-5 minutes. Add the vegetables and stir fry for another 5 minutes.

When everything is cooked through add the soy sauce and lime juice and serve with boiled rice or noodles and enjoy the simple and healthy flavours of the East!
